1. How many types of lemon are there?
2. Why is in a lot of cooking, people like to add in lemon juice?
3. The lemon skin also useful for cooking..? Is this true?

Lemon juice is favorful. Ppl use it because they love it. It can also enhance the flavors of other food. Just as with any food, its used because its liked. The juice tends to keep fruit from browning once cut
the skin is not used. the zest is. the yellow colored outter area of the peel. there are special tools to remove it. the white of the peel is bitter

I heard that like watermelon, alot of nutrients are in the bitter white part of the lemon. Is this true? Also, if you cross-polinate lemons, are they still considered lemons?
Ive notice that the yellow peels are used most often in exotic desserts, and I think it originated in France. I personally love eating lemons raw...just lemons..nothing added onto it.

not so sure about lemons or their use in desserts starting in france. there are ancient recipes, long before france that have use of lemon/peels/juice. The peels and whole lemons themselves have been preserved for forever. A lot of middle eastern/asian ish type cultures
I know many dessers world wide use lemons. Its great for adding flavors and preventing fruits from browning when exposed to the air.
I too, eat lemons raw as is. just as if it were an orange. Really hoping for my soon to be meyers to have fruit sooner than later as its a bit milder of a lemon, much better for eating raw I'm sure

I'm not sure as how many types of Lemon's are available.... but yes the lemon provides a unique taste in cooking dishes. It's just a right alternative instead of the salt. My Mom does more dishes with Lime taste in it. Actually we use the common Lemon (The Yellow Color One).
More BP patients are advised lime instead of salt. Though everyone are normal in blood presures in our home, still we prefer Lime as we like the taste of if very much. We cant take certain dishes without Lime.:)

There are at least three different different groups of lemons, the Acid group, the sweet Lemon group and the Lemon hybrids. The most common group is the acid lemon group. This group includes Eureka, Lisbon, Genoa, Wheatley, Amerfo, Harvey (a nice tree), Billafranca, Bonnie Brae, Kennedy and Sicily. The Anomalous Group, would include Ponderosa, Meyer, Cuban and Rough lemon(used as a root stock). Sweet Group includes Dorshapo, Millsweet (a great sweet lemon), Perrine and Armstrong. There are probably more varieties that I am not familar with.
